Winding River Farms Hashbrown Casserole

Ingredients:
1 lb package Winding River Farms® Shredded Hash Browns
1 stick of butter
Sprinkle of salt and pepper
1 pound breakfast sausage
1 red pepper, chopped
1 small onion, diced
1 & 1/2 cups shredded Monterey Jack cheese, packed
1 & 1/2 cups shredded sharp cheddar cheese, packed
8 large eggs
1 & 1/3 cups whole milk
1 teaspoon seasoned salt
1 teaspoon salt
1/2 teaspoon black pepper
Directions:
Preheat your oven to 400°
Add your Winding River Farms® Shredded Hash Browns to a 9x13 baking dish in an even layer
Melt butter and pour over hash browns
Sprinkle a dash of salt and pepper
Bake for 30 minutes
Dice your red bell pepper and onion
Sauté your onion and red bell pepper and then add your sausage
Cook until golden brown
Take your baking dish out of the oven
Turn oven down to 350°
Transfer your onion, peppers and sausage into baking dish with potatoes and stir
Sprinkle half the cheese on top
Whisk together the eggs and milk and seasoning
Pour the egg mixture into baking dish
Top with the rest of the cheese
Bake at 350° for 40 minutes
Let cool for a few minutes, serve and enjoy!
