Winding River Farms Potato Soup

Ingredients:
2 bags (16oz) Winding River Farms® Southern Hash Browns (or half the 64 oz bag)
1 yellow onion, diced
1 carton (32oz) chicken broth
1 can (10.5) cream of chicken soup
6 tablespoons butter
1 1/2 cup cheddar cheese
1 cup sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
(Toppings)
Cheddar cheese
Sour Cream
Green Onion
Directions:
Dice one yellow onion
Add diced onion to large pot over medium heat
Add frozen hash browns, chicken broth, cream of chicken soup and butter
Cook the soup covered for 20 minutes, stirring frequently (until potatoes are soft)
Stir in cheese, sour cheese, salt & pepper until combined (until cheese is melted)
Top with sour cream, cheese & green onions
Serve & enjoy!
